Amazon ratings: the T-8 Original listing has about 300 ratings, the T-4 listing about 500, and the T-1 listing 76, so these are low-volume, high-ticket machines rather than mass-market gadgets.

Tormek T-1 Kitchen Knife Sharpener

The T-1 is Tormek's answer to "I just want my kitchen knives properly sharp." A patented guide sets the angle anywhere from 8 to 22 degrees per side, stepless, and you can set each side independently. A fine diamond wheel sharpens and a composite honing wheel deburrs and polishes, and Tormek emphasizes that it removes only as much steel as necessary.

It's compact, quiet at a listed 45 dB, and housed in cast zinc with an oak handle. Tormek says it handles all kitchen knife types and ceramic knives. Compared with a whetstone, you give up flexibility (no chisels, no axes) in exchange for speed and repeatability.

Tormek T-2 Pro: for professional kitchens

The T-2 Pro is the T-1's professional sibling. Tormek lists a larger 200 mm fine diamond wheel with optional coarse and extra-fine wheels, a 120 W industrial motor, and accessories for kitchen scissors and round blades. It's aimed at restaurants, institutions and meat processing, and Tormek itself points home users to the T-1. We couldn't find the T-2 Pro sold directly on Amazon US at the time of writing, so buy it from an authorized Tormek dealer.

Tormek T-4 Original

The T-4 is a compact version of Tormek's classic water-cooled grinder. The slow, water-cooled stone won't overheat steel, and the stone grader lets you make the stone cut coarser or finer (Tormek lists an equivalent of 220 to 1000 grit). Pair it with Tormek's jigs and it sharpens knives, scissors, chisels, plane irons, lawnmower blades and woodturning tools.

For knives you'll need a knife jig such as the Tormek KJ-45 centering knife jig, which isn't included with the standard T-4 Original.

Tormek T-8 Original

The T-8 is Tormek's flagship: a bigger, wider stone, a larger leather honing wheel, a 200 W motor with almost twice the torque of the T-4 (14.7 Nm vs 8.4 Nm, per Tormek) and a 25,000-hour service rating. It also includes the SE-77 square edge jig for chisels and plane irons and a truing tool for keeping the stone round and flat.

As with the T-4, knives need a separate jig, or buy the T-8 knife sharpening kit bundle, which pairs the T-8 Original with Tormek's KSK-106 knife jigs.

What to know before you spend this much

Diamond vs water-cooled stone

The T-1 and T-2 use dry diamond wheels: fast, flat, no water, and good on hard steels, but limited to the grits Tormek sells. The T-4 and T-8 use an aluminum oxide stone running through water, which keeps the edge cool and lets you grade the stone coarser or finer. Angles

The T-1's 8° to 22° per side range covers the common settings: many Japanese knives around 15° per side and many Western knives around 20°. Check your knife maker's recommendation; our angle chart lists typical angles by knife type. On the T-4 and T-8, Tormek's AngleMaster (included) sets the angle with the jig.

Upkeep and running costs

The diamond wheels on the T-1 and T-2 don't need dressing or water, and the composite honing wheel carries its own polishing agent. The T-4 and T-8 stones slowly wear down and need occasional truing to stay round and flat; the T-8 includes a truing tool, and both include a stone grader to refresh the surface. The leather honing wheels on the T-4 and T-8 use honing paste (PA-70 is included). Budget for jigs, too: on the multipurpose machines, each type of tool has its own.

Space and noise

The T-1 is the only one designed to live on a kitchen counter: it's the smallest and, at a listed 45 dB, the quietest. The T-8 weighs nearly 15 kg and belongs on a workbench, with room for the water trough.

Serrated knives

If you sharpen tools as well as knives, the T-4 suits a home workshop and the T-8 suits heavy or professional use; budget for a knife jig with either.

What is the difference between the Tormek T-1 and T-2?
Both are kitchen-knife sharpeners with a diamond wheel, a composite honing wheel and a patented angle guide.
