Buy the HORL 3 Cruise if you want the best-made simple roller, and the AIERLIAN kit if you want the one most people actually buy, for a fraction of the price. Every rolling sharpener works the same way: a magnet holds the knife at 15 or 20 degrees and you roll a diamond disc along the edge. That makes them easy, and it also sets their limit. On paper it does everything the premium brands do.

Most rollers give you two angles. This kit's magnetic base has four (15, 18, 20 and 22 degrees) and four discs from 400 to 6000, plus a vegetable-tanned leather strop and a zippered case.   • The HORL 3 Walnut is the premium HORL, with a ceramic honing disc instead of steel. It's newer, with fewer sales so far.

What matters when you buy

The honing disc

Steel honing discs (HORL 3 Cruise, Tumbler Original) straighten the edge; ceramic ones (Tumbler Pro, the budget kits) also remove a little steel and leave a finer finish. Either works. Ceramic is the better partner for hard Japanese steel.

Whether discs come off

Fixed discs mean less to go wrong. Removable discs mean you can add a coarse disc for chips or fine whetstone discs later. Decide whether you'll ever bother.

The magnet

Small pocket knives slip on weak magnets. HORL calls out its grip pad for this, and the budget kits list their magnet counts.

Who should skip rolling sharpeners

Yes, for knives that suit their angles. A magnet holds the knife at a fixed 15 or 20 degrees and a diamond disc grinds a new edge, so anyone gets a consistent bevel. They're not right for knives below 15 degrees or for single-bevel Japanese knives.
